Wildsam is a company that makes incredible “field guides” that go further than a classic travel guide. Rather than just telling you which places to visit, they try to capture the story of a place.
I helped edit and contribute to their first “photo almanac,” an exploration of all things Texas Barbecue. That meant interviewing pitmasters, including the youngest female pitmaster in the state, welders who build smokers, and a fourth-generation sausage maker. I also dug through the archives to find the earliest mentions of BBQ in Texas history, and wrote an original essay.
